Lemon Ice Box Cake

I remember growing up and eating this cake, not sure who made it but probably my Noni (this was my Grandma). I’m sure it was made from scratch and we had it at our Family Reunion’s.I found this recipe and it taste like I remember and it’s made from a box mix and its delicious¬†and easy to make.20140214-153405.jpg

It bakes usually in a 9×13 pan but I was sharing this cake so I made one ¬†8×8 and one heart shape since it is Valentine’s Day. This cake remind’s me of summer but since today is 88 degree’s here in the Desert and we have a abundance of lemon’s it just seems appropriate.20140214-153414.jpg


  • 1 Duncan Hines moist deluxe lemon cake mix
  • 1 cup buttermilk
  • 1 3oz.lemon instant pudding mix (dry) sugar-free can be used
  • Icing:
  • 4 cups powder sugar
  • 1/3 cup fresh or bottled lemon juice
  • 3 Tbsp vegetable oil
  • 3 Tbsp water


In a large bowl, stir together dry cake mix and pudding mix. In another bowl, combine wet ingredients and eggs that the cake mix calls for plus the buttermilk.If your box mix reads 1 1/3 cup water substitute the 1/3 cup for lemon juice.If it calls for 1 cup water add that plus the 1/3 cup lemon juice.This will make the cake even more lemon puckering. Beat with mixer until blended. Add to dry mixture and beat until combined. Bake in a greased 9×13 baking pan in a preheated 350 degree oven for the time the cake mix box calls for. It will require a couple of minutes longer baking time than cake mix box calls for because of the extra moisture produced by the milk. Check with tooth pick for doneness.


Combine water, oil, powdered sugar and lemon juice with a mixer until smooth. Add one more tablespoon of water if it seems to thick. Glaze the cake when it is just slightly cooled. Do not over glaze it because the icing is sweet. Apply just a thin layer . There will be icing left over for a few more cakes or donuts or anything you make in the next few weeks that would be great with this glaze drizzled over top.
