a “Southern Thing” they say, to cook like this. I know 2 weeks ago I was watching my middle and made a “Lite Blueberry Icebox Pie” and it was yummy. Now I go off the charts with this Buttermilk Pie, after you read the ingredients you will understand. So we are heading to Louisiana next week and I want to take something delicious and Southern Style to my husband’s family and I think this will work. It is very good and taste like a big Sugar Cookie 🙂 I say “what the hey” one piece wont hurt ya, but I am thinking of changing its name to the “Gym Pie” cause that is where you will need to go after you eat this…
But with this all aside this pie was very easy to make, very tasty and heart warming.It brought a smile to my husband’s face…
2 9-inch pie crusts, unbaked (homemade or store-bought)
3 3/4 cups sugar (wow)
1/2 cup flour
1/2 teaspoon salt
1 teaspoon vanilla
6 eggs, beaten (I know right)
1 cup (2 sticks) butter, melted (OMG)
1 cup buttermilk
Preheat oven to 350 degrees. Arrange pie crusts in 2 9 inch pie plates and place them on a large cookie sheet.
Mix together the sugar, flour, and salt. Beat in the eggs, butter, buttermilk, and vanilla until well combined. Pour into the pie crusts. Bake for 1 hour or until no longer jiggly – check them after about 45 minutes. If the tops are getting too brown (mine were), cover them loosely with foil. Let cool one hour before serving. We prefer these served cold.
