Today is National Chocolate Cake Day, so I am re-posting a day from 2010 for a easy way to celebrate the day.You still have time go make one!
The other day I was reading “Bon Appetit” magazine and they said how great Chocolate Cake is, duh! I know, I put it up there with our generations food of Hamburgers,French Fries,Taco’s,Spaghetti, Ice Cream, Ding-Dong’s and Twinkie’s, oh and remember when Doritos’ Taco Flavored came out in Jr. High, they were the bomb! We swallowed them down with Coke, the regular kind not Diet…ugggggg!!!!
My world now days does not consist of much Chocolate Cake, I do love it but am not much of a Baker and really, I would rather reach for something salty,spicy and savory before something sweet, but this article got me thinking…ummm, Chocolate Cake? The article said, “Everyone should have a good Chocolate Cake in their “Recipe Repertoire”, you know a go to cake. When in a pinch we bust out the box mix,yea that’s ok but every now and then we need the real thing so I started browsing thru their recipes.Once again the ingredients list was way long and the preparations were way deep (did I mention I am not much of a baker) this discouraged me but the desire to have a great Chocolate Cake in “my repertoire” was still very strong. All of a sudden brain flash, back to Jr. High, Mrs.Reardon’s 8th grade Home Ec. class, Crazy Chocolate Cake, I use to make it all the time,( I think my parents got a little tired of it) it was so easy and so yummy.Went searching for my cookbook from 8th grade, my Mom actually just gave it to me a few months ago and I was so pleased to ponder thru it, found the recipe and began baking ( Mike was so excited I could hear him chanting “Life is great, Let’s eat Chocolate Cake”)
Here is the Recipe:
❤ 1 1/2 c. flour (one & one half cup)
❤ 3 Tbsp. cocoa
❤ 1 tsp. baking soda
❤ 1 c. sugar
❤ 1/2 tsp. salt
❤ 1 tsp. vanilla
❤ 6 Tbsp. oil
❤ 1 Tbsp. white vinegar
❤ 1 c. water
Time 25-30 min. Temp. 350, Pan 11×7. Combine all dry ingredients in the pan the cake is to be baked in and stir with a fork until well mixed. Make 3 depressions in the dry ingredients, one for oil, one for vinegar, and one for vanilla.Then pour 1 c. water over all ingredients and stir with a fork until well blended.Bake.
Easy Peasy Frosting
❤ 2 3/4 c. powdered sugar
❤ 6 Tbsp. unsweetened cocoa
❤ 6 Tbsp. butter
❤ 5 Tbsp. evap. milk ( or use at least 2% regular milk)
❤ 1 tsp. vanilla
In a medium bowl, sift together the sugar and cocoa, and set aside. Than in a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with the milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.✻ Frost and enjoy.
So I will tell you what is really “CRAZY” I felt a little snub because I now have my own go to cake in my “Recipe Repertoire” and really it was there all along. Right I know it’s not “Bon Appetit” style , but it’s good and kind of cute in that little 11×7 pan .
