Engagement Chicken

The story goes…Approximately 26 years ago a woman fashion editor gave this recipe to her co-worker who than made it for her boyfriend. Than bam, a month later the boyfriend proposed, than inspired 3 weddings after that, which made it famous,true story.

So this is for the “Single Ladies”

  • 1 Whole Chicken
  • 2 medium size lemons
  • 1/2 cup lemon juice
  • sea salt and black pepper

Pre-heat oven to 400. Wash the whole chicken inside & out and remove giblets.Pat dry with paper towels and let the chicken sit for 10-15 minutes to get to room temp.Pour the lemon juice over entire chicken inside and out, next season chicken inside and out with the salt and pepper, amount depends on your liking.Now prick the lemons about 3-4 times with a sharp fork or knife and place deep into the cavity of the chicken.

Next step is to place the chicken breast side down in a roasting rack and lower the temp. to 350 and immediately place the chicken in the oven (the rack should be placed in the upper part of the oven)Bake the chicken for 15 minutes uncovered.Next remove the bird from the oven and flip it over so now the bird is breast up and cook for another 35-40 minutes longer.Check its temperature in the thigh until it reaches 170 or juices run clear.Finally once the Engagement Chicken is done cooking, let it cool for about 5 minutes and serve with the juices.
